HOW TO PREPARE MATOKE DISH

Matoke is a dish made with green bananas, and it’s a popular staple in East African cuisine, especially in countries like Uganda, Rwanda, and parts of Kenya and Tanzania. Here’s a simple recipe for preparing Matoke:

Ingredients:

  • 6-8 green bananas (matoke)
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 green chili pepper, chopped (optional for spice)
  • 2 tablespoons vegetable oil
  • 1 teaspoon curry powder
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1 cup coconut milk (optional)
  • Fresh coriander or parsley for garnish (optional)

Instructions:

  1. Prepare the Matoke:
  • Peel the green bananas and cut them into bite-sized chunks. You can either cut them into rounds or slices.
  • Sauté the Aromatics:
  • In a large pot, heat the vegetable oil over medium heat.
    • Add the chopped onions, minced garlic, grated ginger, and green chili pepper (if using). Sauté until the onions are translucent.
  • Add Tomatoes and Spices:
  • Add the chopped tomatoes to the pot and cook until they are softened.
    • Stir in the curry powder, ground coriander, turmeric, salt, and pepper. Mix well to coat the ingredients with the spices.
  • Cook the Matoke:
  • Add the matoke (green bananas) to the pot and toss them in the spice mixture until well coated.
    • If you’re using coconut milk, add it to the pot at this stage. Otherwise, you can use water for cooking.
  • Simmer:
  • Reduce the heat to low, cover the pot, and let the matoke simmer until they are tender. This can take approximately 20-30 minutes. Stir occasionally to prevent sticking.
  • Check for Doneness:
  • Test the matoke with a fork to see if they are tender. They should be soft but not mushy.
  • Adjust Seasoning:
  • Taste the dish and adjust the seasoning if necessary. Add more salt, pepper, or spices according to your preference.
  • Garnish and Serve:
  • Once the matoke are cooked to your liking, garnish the dish with fresh coriander or parsley if desired.
  • Serve Warm:
  • Matoke is traditionally served warm and can be enjoyed as a main dish or as a side.

Matoke pairs well with rice, chapati, or other bread, and it’s a delicious and hearty dish with a unique flavor.
