Ingredients:
- 6-8 green bananas (matoke)
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1 green chili pepper, chopped (optional for spice)
- 2 tablespoons vegetable oil
- 1 teaspoon curry powder
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- Salt and pepper to taste
- 1 cup coconut milk (optional)
- Fresh coriander or parsley for garnish (optional)
Instructions:
- Prepare the Matoke:
- Peel the green bananas and cut them into bite-sized chunks. You can either cut them into rounds or slices.
- Sauté the Aromatics:
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onions, minced garlic, grated ginger, and green chili pepper (if using). Sauté until the onions are translucent.
- Add Tomatoes and Spices:
- Add the chopped tomatoes to the pot and cook until they are softened.
- Stir in the curry powder, ground coriander, turmeric, salt, and pepper. Mix well to coat the ingredients with the spices.
- Cook the Matoke:
- Add the matoke (green bananas) to the pot and toss them in the spice mixture until well coated.
- If you’re using coconut milk, add it to the pot at this stage. Otherwise, you can use water for cooking.
- Simmer:
- Reduce the heat to low, cover the pot, and let the matoke simmer until they are tender. This can take approximately 20-30 minutes. Stir occasionally to prevent sticking.
- Check for Doneness:
- Test the matoke with a fork to see if they are tender. They should be soft but not mushy.
- Adjust Seasoning:
- Taste the dish and adjust the seasoning if necessary. Add more salt, pepper, or spices according to your preference.
- Garnish and Serve:
- Once the matoke are cooked to your liking, garnish the dish with fresh coriander or parsley if desired.
- Serve Warm:
