HOW TO MAKE MANDAZI’S

Mandazi is a popular East African snack, similar to doughnuts but without the sweet glaze. They are deep-fried, fluffy, and often flavored with coconut milk or spices. Here’s a simple recipe for making Mandazi:

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup coconut milk (you can substitute with regular milk)
  • 1/2 cup water (adjust as needed)
  • Vegetable oil for frying

Instructions:

  1. Mix Dry Ingredients:
  • In a large bowl, combine the all-purpose flour, sugar, baking powder, salt, and ground cinnamon (if using).
  • Add Wet Ingredients:
  • Gradually add the coconut milk and water to the dry ingredients. Mix well to form a soft dough. Adjust the amount of water as needed to achieve the right consistency.
  • Knead the Dough:
  • Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
  • Rest the Dough:
  • Cover the dough with a clean cloth and let it rest for about 30 minutes. This helps the dough relax and makes the mandazi softer.
  • Roll and Cut:
  • Roll out the dough on a floured surface to about 1/4 to 1/2 inch thickness.
    • Cut the dough into desired shapes, commonly triangles or squares.
  • Heat Oil:
  • In a deep pan or fryer, heat vegetable oil to 350-375°F (175-190°C). You’ll need enough oil to submerge the mandazi.
  • Fry the Mandazi:
  • Carefully place the cut pieces of dough into the hot oil. Fry each side until golden brown, turning as needed. This usually takes about 2-3 minutes per side.
  • Drain and Cool:
  • Remove the fried mandazi from the oil using a slotted spoon and place them on paper towels to drain excess oil.
  • Serve:
  • Allow the mandazi to cool slightly before serving. They can be enjoyed on their own or with tea, coffee, or your favorite dipping sauce.
